Breast Rolls With Ham And Cheese

If you want to make a quick dinner or an improvised and delicious meal, this is your recipe: breast rolls with ham and cheese. 

If you know Cordovan flamenquins, although they vary, they have a similarity. Instead of having beef fillets like flamenquines, these rolls are made with chicken breast.

It is a simple recipe, quick to make and that everyone likes.

Children love it. Their combination of flavors is one of their favorites and you will be right on their menu. Surprise them with the accompaniment! Potato wedges and salad.

All that said, let’s get down to business:

Ingredients for 4 people

  • 4 chicken or turkey breasts filleted
  • 4 cheese steaks of your choice. You can use havarti, a cheddar, a semi-cured, sandwich type or whatever you like the most.
  • 4 slices of Serrano ham
  • 1 egg
  • 50 g breadcrumbs
  • a pinch of salt
  • Pepper
  • Oil for frying (if it is extra virgin olive, better than better)

To accompany

  • 2 large potatoes
  • Various spices (thyme, oregano, paprika, pepper, parsley, dried garlic …)
  • Salt
  • Flour
  • Lettuce, tomato and fresh cheese 

Preparation

We prepare the rolls

  • We open the breasts on the baking tray or the worktop and add a pinch of salt and black pepper.
  • On top of each breast we will place the filleted cheese.
  • Afterwards, we will put a slice of Serrano ham on top for each breast.
  • Next, we will roll a breast by taking one end first and folding inwards. With the help of our fingers, we will roll to the end.
  • To fix the roll so that it does not open or detach, we will insert a toothpick in the middle, which goes through all the meat to fix well.
  • We repeat the whole process with the rest of the breasts.
  • In a separate plate, we will beat an egg with the help of a fork. We add another pinch of salt.
  • In another plate we will place the breadcrumbs.
  • We take a breast roll with cheese and ham, and we have a good time in the egg, so that it is impregnated on all sides. With the help of two forks, we take it, raise it and drain the excess egg.
  • Later, we will pass that same roll on the plate with the breadcrumbs, so that everything is covered. Shake lightly to remove excess breadcrumbs.
  • We reserved on a plate.
  • We repeat both processes with the rest of the rolls.
  • For the next step, we will heat the extra virgin olive oil in a pan. When it’s hot, add a roll or two and fry well. We wait for the bottom to brown and turn it over. It has to brown on all sides.
  • Once fried and golden brown, remove from the pan and place them on a plate with absorbent kitchen paper. This will drain off excess oil.
  • When serving them, don’t forget to remove the toothpick.

We prepare the accompaniment: potato wedges

  • Wash the potatoes and place them in a microwave-safe dish, skins and all.
  • Put it in the micro and heat for 4 minutes.
  • Take them out and let them cool.
  • Meanwhile, grab a plastic or snack bag. Put inside a pinch of salt, two tablespoons of flour and the spices you want, they are all worth.
  • Cut the potatoes with their skins into small squares. Put these squares or pieces in the plastic bag and shake everything vigorously.
  • In the same oil that we had made the rolls, we fry the marinated potato pieces until golden brown. We remove and let the excess oil drain on a plate with absorbent paper.

    We prepare the salad

    • Wash the lettuce, cut it into julienne strips and put it in a salad bowl.
    • Wash and cut the tomato into pieces.
    • Cut the fresh cheese into pieces. Put everything in the salad bowl.
    • Garnish with extra virgin olive oil and a pinch of salt. Sprinkle oregano on top.
