Cornbread

Cornbread is a sweet and delicious recipe to enjoy a different bread that adapts to any dish. It was an important part of the diet of the colonists in the United States, who, in the absence of wheat, used corn.

Also in various regions of Central America and the Caribbean, the indigenous people prepared a bread very similar to today’s corn bread. Corn provides fiber, protein, minerals such as calcium, iron, magnesium, folic acid and vitamins A, B6 and B12, which provide great benefits to our health.

Cornbread Recipe 1

Ingredients (for two loaves):

For the foaming:

  • 70 grams of fresh yeast (or 2 and ½ tablespoons of baking powder).
  • 1 spoon of sugar.
  • ½ cup of warm milk.
  • 2 tablespoons of flour.

For the mass:

  • ½ kg of flour.
  • 100 grams of cornmeal.
  • 1 pinch of salt.
  • ½ cup of sugar.
  • 3 eggs.
  • 1 tablespoon lemon zest.
  • 2 tablespoons of vanilla extract.
  • 70 grams of butter.

How do you prepare?

  1. First, we start with the frothing. Place the sugar, flour (sifted) and yeast in a container.
  2. Pour in the warm milk and mix to form a cream.
  3. Cover with a cloth and let it rise for about 10 minutes in a warm place, such as the counter.
  4. Meanwhile, prepare the dough. To do this, sift the flour, salt and cornmeal, mix and reserve.
  5. In another bowl, put the eggs and beat with the sugar, vanilla, lemon zest, sugar and melted butter.
  6. Add this mixture with that of the flours and stir well so that a homogeneous mass remains.
  7. Pour in the foamed yeast that you reserved at the beginning and mix.
  8. Flour the countertop or table and pour the preparation there.
  9. Work your hands into a dough until it is not sticky but elastic.
  10. Put in a container and cover with plastic wrap and then with a cloth.
  11. Let it take on more volume (to double), this will take you about half an hour.
  12. After that time, divide the dough in half and give it the shape and size you want.
  13. Preheat the oven to 180 ° C.
  14. Grease and flour two baking molds and place the dough there.
  15. Cook for 15 minutes.
  16. Remove from the oven, you can paint with a mixture of egg yolk and water, sprinkle with cornmeal.
  17. Return to the oven until golden brown and well cooked.
  18. Let them cool and cut into slices.

Cornbread Recipe 2

In this case, in addition to the corn, you will add raisins. The result is a delicious bread to eat for breakfast or a snack, or if you like to combine sweet and sour, for lunch and dinner. The preparation time is approximately 1 hour.

You need (for 12 servings):

  • 2 cups of cornmeal
  • 2 cups of all-purpose flour.
  • 3 tablespoons of baking powder.
  • 3 eggs.
  • 1 pinch of salt.
  • 2 cups of milk
  • 150 grams of butter.
  • 200 grams of raisins.
  • 1 cup of sugar.

Step by step of this recipe:

  1. Preheat the oven to 180 ° C, grease and flour a baking dish.
  2. In a bowl, sift the cornmeal with the other flour, salt, and baking powder.
  3. Add the sugar and eggs one by one, continuing to beat.
  4. Pour the milk little by little, always mixing with a wooden spoon or plastic spatula.
  5. When you get a cream, put the butter at room temperature.
  6. Finally, place the raisins (if you don’t have raisins or you don’t like them, you can use pitted and chopped dates) and when all the dough is homogeneous, empty on the mold that you reserved before.
  7. Bake for 40 minutes or so (you can do the stick or knife test to see when it is ready, if it comes out dry and clean).
  8. Remove from the oven and let it cool before serving in slices, you can accompany with jam, cream cheese or butter.
