Meatloaf And Potato Omelette

They seem like two separate and impossible things to combine. But no, this dish exists and it is easy to prepare. We present you the meatloaf and potato omelette.

Option 1: Meatloaf and potato omelette

Sicilian meat roll

Ingredients

For the meat

  • bacon 250 g
  • minced meat 350 g
  • ketchup 3 tablespoons
  • breadcrumbs 1 tablespoon
  • eggs 3
  • cheese slices 6
  • piquillo peppers 4
  • 1 pinch black pepper
  • 1 pinch salt
  • 1 drizzle olive oil

For the omelette

  • eggs 2
  • potato 1
  • onion ½
  • garlic clove 1

Fill procedure

  1. Heat a saucepan with water and a pinch of salt.
  2. When it boils, introduce two eggs and leave them for 15 minutes without stopping boiling,  but trying not to give too much pot so that they do not break. Reserve.
  3. In a separate bowl, add the minced meat and ketchup and mix well.
  4. Little by little, add the breadcrumbs, the salt, the black pepper and the egg.
  5. Mix well until everything is well incorporated. Cover the bowl with plastic wrap and let it marinate.
  6. In another bowl, cut the potatoes into slices, chop the onions and the garlic clove.
  7. Fry these ingredients in a frying pan with oil. When it is well fried (with the crispy potatoes), remove from the heat and drain the oil well.
  8. Let cool slightly while two eggs are beating and add them to frying. Mix well.
  9. Preheat the oven to 180ºC and grease a baking tin with oil.

Assembling the plate

  1. Place the bacon in the mold crosswise so that it covers the bottom and slightly covers the walls.
  2. Add the minced meat over the bacon making sure it is evenly distributed. Cut the hard-boiled eggs in half and place them deep in the minced meat with the yolk facing up.
  3. On top of the eggs, place the slices of cheese and on top of the cheese the piquillo peppers, cut in half.
  4. Pour the egg and potato mixture up to the edge of the mold.
  5. Cover with aluminum foil and bake for 20 minutes at 180ºC.
  6. After 20 minutes, remove the aluminum foil and bake another 20 minutes, making  sure that the tortilla does not brown too much.
  7. Once done, unmold it on a serving platter and consume hot.

Option 2: Meatloaf and potato omelette

Ingredients

  • potatoes 3
  • onion ½
  • eggs 3
  • minced meat (can be veal alone, pork alone or mixed) 250 g
  • bacon strips 18-20
  • Parsley
  • garlic clove 1
  • green peppers 2
  • White table wine
  • Bread crumbs
  • Salt
  • Oil

Process

  1. In a frying pan with plenty of oil, fry the potatoes with the onion until the potatoes are crisp (as if you were going to make a potato omelette). Drain the oil well and reserve in a bowl.
  2. In a separate bowl, beat an egg, add the minced meat, a little salt, the finely minced garlic, a little parsley, a generous splash of white wine and breadcrumbs and knead well. Let marinate.
  3. Beat two eggs and add to the potato fry, mixing well. Season to taste.
  4. Grease a baking tin with oil and place the bacon strips crosswise so that they cover the oven and part of the wall (if they come off, nothing happens).
  5. Over the bacon, pour the minced meat mixture and flatten with a spoon.
  6. On top of the meat, place a layer of fried green peppers and on these add the potato and egg mixture. If the bacon is hanging out of the mold, close the ends over the tortilla.
  7. Bake for 40 minutes at 220ºC. Unmold on a serving platter and consume hot.
