Pineapple Flan: Step By Step Recipe

Vanilla or egg are usually the majority of custards that are prepared in many kitchens. However, it is always possible to incorporate surprise ingredients, such as the fruit that is added to a pineapple flan.

This is a simple dessert to prepare in which it is possible to use fresh fruit, in syrup or in its juice. The end result is a delicious, creamy and light sweet that the whole family loves.

Without a doubt, flan is one of the most traditional and classic desserts of the pastry tradition. In its basic recipe, milk, sugar and eggs are combined with caramel that adds a special touch of color.

However, sometimes you can expand the range of possibilities and introduce variations in the preparation. Mixing fruits in its base or other flavors, such as chocolate or cheese, are some of them.

The pineapple flan is obtained by incorporating this fruit among the ingredients. And it is very interesting to cook with it, as it is a light product, with a good supply of vitamin C and fiber.

In addition, it contains enzymes that facilitate digestion and, according to scientific studies, it can affect other actions of the body, such as blood clotting, inflammatory processes and the absorption of drugs.

It can be prepared on its own, in the form of a smoothie, in a cake or in a flan, as in the two recipes that are presented below.

1. Pineapple flan in the oven

This dessert is tasty and easy to prepare. With the final decoration it is very original and attractive.  

Ingredients needed for a flan of 8 servings

  • Evaporated milk: one can.
  • 1 can of sweetened condensed milk.  
  • Pineapple juice: 1 cup.
  • 5 eggs
  • 1/2 cup of sugar.
  • 1 tablespoon of pineapple extract or essence.
  • 1 and a half cups of sugar to make the caramel.

Step by Step

  • Before turning on the oven to heat it to 180 degrees Celsius, you have to prepare a mold to bake in a bain-marie.  
  • First start with the preparation of the caramel. Pour the sugar into a saucepan over medium heat. It is not necessary to stir much, but it is necessary to observe so that it does not burn. As it begins to dilute, it acquires a golden color; now is the time to remove from fire. It must be avoided that it reaches a very dark color, since in this way it acquires a bitter taste.
  • Then pour the caramel into the mold and keep moving so that it covers the entire surface of the bottom and the walls. It is necessary to be careful not to burn yourself, as the temperature of the sugar is high.  
  • To prepare the flan, pour the condensed milk, the evaporated milk, the pineapple juice, the eggs, the half cup of sugar and the pineapple essence in a blender or blender glass. Mix until everything is integrated and strain.  
  • Pour the flan mass into the mold and place to cook in a bain-marie. Then put in the oven and leave it for 1 hour.  
  • After time, let it cool down to room temperature and reserve in the fridge until serving time.  

This pineapple flan is very well decorated with whipped cream and a candied cherry. But this fruit combines perfectly with other ingredients, so it is also possible to sprinkle it with ground cinnamon or grated coconut.  

2. Pineapple flan without oven

The second proposal for pineapple flan is a bit different, since it is not necessary to use the oven for its preparation. An option that highlights the intense fruit flavor and its creamy texture.  

Ingredients to use for 8 servings

  • 1/2 cup of sugar.
  • 2 tablespoons of water.
  • 1 tablespoon of lemon juice.
  • 5 whole pineapple slices in syrup.
  • 1 1/2 cups of pineapple in syrup.  
  • 6 eggs
  • 1 cup of milk.
  • 1 tablespoon of vanilla essence.
  • Condensed milk: 1 cup.  

Steps to follow when making pineapple flan without an oven

  • Place a skillet over medium heat and add the sugar, water and lemon juice. When a golden color begins to appear, remove from heat. It is necessary to be very alert, since otherwise the sugar can burn easily and acquire a strong and bitter taste.
  • Then, pour the caramel into a round mold and move so that it covers the entire surface of the base.  
  • Place the whole pineapple slices in the bottom of the pan.
  • On the other hand, blend the rest of the pineapple, the milk, the eggs, the vanilla essence and also the condensed milk. When everything is integrated, pour into the mold and then cover with aluminum foil.  
  • To cook the flan, place it in a large pot and add boiling water until it reaches half the height of the mold.  
  • Cover and simmer over low heat for 1 hour. After time, remove carefully and allow to cool completely before unmolding.

    A dessert for special occasions

    The use of natural pineapple or in syrup is indistinct, although it is always preferable to opt for the first, since it is its natural form. Although in this case it is a bit more difficult and laborious to peel.  

    To give it an extra aroma, it is possible to infuse the milk with a vanilla bean, a cinnamon stick, some cardamom grains or a little orange or lemon peel.

    This pineapple flan can be prepared in a whole mold (round or elongated) or in small individual cups. In this case, it is necessary to spread the base and sides of each of them with caramel.

    To check if the flan is done, you have to insert a needle in the center. If it comes out clean, it is already at the perfect doneness. Otherwise, cook for 5 more minutes.

    Although fruit is present in its preparation, the pineapple flan is still a dessert with a high presence of added sugar.   That is why the best nutritional recommendation is to reserve it to eat sporadically or on special occasions.
