Prepare A Coconut And Dulce De Leche Cake

  • 1 teaspoon vanilla flavoring (optional)

    • 1 egg
    • 2 1/2 cup of grated coconut (200 g)
    • 4 1/4 cup sugar (250 g)
    • 1 teaspoon of honey (15 g) (optional)
    • 1 teaspoon of cinnamon (5 g) (optional)
    • Zest of half a lemon (optional)
    • 1/2 kilo of dulce de leche you can make it yourself or buy it

    Utensils

    • 1 bowl

    • Oven
    • 1 pan
    • 1 spoon

    Preparation

    • First, preheat the oven to 180ºC.
    • Next, sift all the dry ingredients :  the flour, the sugar and the yeast. Do not skip this step, it is essential for the base to be perfect.
    • Beat the butter and sugar until smooth, until you have a uniform cream.
    • Then, add the egg, the yolk and the vanilla flavor to the buttercream and sugar.
    • Add the dry ingredients that you had previously sifted.
    • Then mix everything to form a compact and smooth dough.
    • Roll out and put on a buttered pan.
    • Bake for 3-4 minutes at 180 ºC on a tray placed in the middle or lower part of the oven.
    • Take out of the oven and when it is warm, cover with a good layer of dulce de leche, up to the edge of your cake.
    • Then, prepare a cream with the coconut, the sugar, the honey and the eggs, the cinnamon and the lemon zest and put on the dulce de leche.
    • Finally, put it back in the oven preheated to 180 ºC and let it cook for about 15 minutes. Be careful with the coconut, don’t let it burn too much.

    Ingredients

    • 2 packages of round or square Maria type cookies flaky
    • 1 tablespoon of sugar (20 g)
    • 1/2 kilo of dulce de leche
    • 2 1/2 cup of grated coconut (200 g)
    • Half a glass of milk (100 ml)
    • 1 cinnamon stick
    • Ground cinnamon
    • Lemon peel
    • 1/4 of glass of cognac (50 ml)

    Utensils

    • 1 bowl
    • 1 removable pan
    • A spoon
    • 1 plate
    • 1 saucepan

    Preparation

    • First, heat the milk with the sugar, the cinnamon stick and the lemon peel, until it takes on flavor. Let it temper. If you want to skip this step, you can use meringue milk that they sell in supermarkets, it is very rich and will give your cake a very special flavor.
    • Then put the milk on a plate with a nice splash of brandy.
    • Next, soak the cookies one by one in the milk and form the first layer in the pan.
    • Put a second layer of dulce de leche.
    • Then, alternate layers of cookies with layers of dulce de leche, like this until it reaches the desired height.
    • Finish by sprinkling plenty of grated coconut on top and cinnamon powder.
    • Put it in the fridge for a few hours until it takes shape. Do not remove it from the mold until it is cold.

      Additional tips

      • Use premium ingredients for this coconut and caramel cake. A good dulce de leche and a fresh grated coconut.
      • If you can use a removable or silicone lunchbox, much better. The classic metal lunch boxes are sometimes not good allies, the dough stays stuck in them.
      • You should also take care that the coconut does not cook because it will be bitter.
      • Also, do not serve your coconut cake until it is completely cold.
