  • 1/2 onion (30 g)
  • 2 cloves of garlic (6 g)
  • 1 cup of milk (240 ml)
  • 4 chicken breasts (600 g)
  • 6 or 10 mushrooms (150 g)
  • 1/2 cup of chopped walnuts (70 g)
  • 1/2 cup of cooking cream (120 ml)
  • 2 tablespoons of powder to prepare mushroom soup (10 g)
  • Black pepper

First of all, using fresh mushrooms will give our dish a much more pleasant flavor. In addition, it will give it a very special homemade touch. However, it has a drawback: you have to clean the mushrooms properly before cooking.

  • Like all mushrooms, the mushroom dough is quite delicate. Therefore, it is best not to put them directly under running water. This can cause them to lose some of their characteristic texture. The most advisable thing is, then, to cut the stem and pour them into a bowl with water.
  • We will remove the mushrooms in the bowl. And then we will leave them in a colander for a few minutes.
  • Once they have dried slightly, we rub them with a clean and damp toothbrush. We will go over them delicately one by one to remove all the dirt. At the end, we will submerge them in water again.
  • We drain them once more to be able to eliminate all the water and we will cut them into sheets. On these slices we will add a splash of lemon to prevent them from turning black. They are ready to cook.

Cleaning mushrooms is somewhat tedious, but it doesn’t take as long as it seems. In addition, it will give the recipe a much more special flavor and texture than if we used already prepared canned mushrooms.

  • To continue, we will mix the mushroom sauce powder with the milk. We will stir to get a homogeneous mixture. On the other hand, in a saucepan, we will heat the cooking cream over a very low heat.
  • As soon as it starts to smoke, we pour in the milk and stir everything until it reheats well, without boiling. At that time, we will turn off the heat and reserve the sauce. Then, we cut the onion into small pieces and the garlic cloves into small pieces.
  • In a pan with olive oil, we will sauté these ingredients for a few minutes, just until the onion begins to brown.
  • Then, we add the black pepper (to taste) and continue sautéing the mixture for about 3 more minutes.
  • At that point, we lower the heat to a minimum and add the mushrooms previously cut into slices. We will let them cook for around 10 minutes.
  • Next, we pour in the milk and cream mixture, and we continue to stir the entire mixture with the heat to low.
  • Finally, we add the chicken breasts to the pan and cover it so that everything cooks for approximately 2 minutes.
  • The breasts will absorb the flavor of the sauce, mushrooms and onion, but will remain slightly undercooked.
  • Afterwards, we place all the mixture in a baking tin. And, on it, sprinkle the chopped walnuts.
  • With the oven preheated to 180 ºC, we will bake everything for about 15 minutes or 20 minutes. We can control the cooking point as the top is browned and the layer of nuts is gratinated.

With canned mushrooms

If you need to save time preparing this recipe, you can use canned mushrooms. In this way, you will avoid having to clean the mushrooms one by one. It will be enough to open the can of mushrooms and cut the mushrooms into slices, if they are not already laminated.

Later, we will add them to the pan at the same point as in the previous preparation method. This option will facilitate the preparation of the dish but it will take away some of its charm, since its flavor is not the same.
